Course Includes:

Two-Handed Chocolate Dipping (You can hand-dip with the 2-handed method more chocolates than a 6" or 10" enrober at less cost for equipment and personnel)

One Shot Hand Dipping (for making moulded chocolates)

Tempering Chocolate  (Three methods including microwave melting of chocolate)

Preparation of Centers,  including Creams, Caramels, Meltaways, Brittles, Jellies, Nougats,  and Truffles

Center Cutting - Operation of Caramel Cutter & Cream Center Cutter

Packing of bulk & Retail Boxes  - One person packing table operation

Microwave Fudge Making (Using all scratch ingredients - no mix)

Candy Merchandising and Presentation

 

All courses are available May 1st through September 30th only. 

This is a hands-on course .... You actually make the candy.

 

You will receive a dipping training video-tape at the conclusion of the ten day training at our facility in Lincoln, and a book containing all formulae, ingredient resources, merchandise resources, and miscellaneous equipment list for items you need in order to make life easier in your chocolate production.

Due to the personal attention we give each student, we do not accept more than one or two people in a class at a time.

WE TEACH THE BASICS - WHAT YOU LEARN HERE WILL TAKE YEARS TO LEARN ON YOUR OWN.

All personal expenses for all courses such as TRAVEL, HOTEL, and MEALS are not included in the course.  All charges are to be paid for by the individual being trained.
